Kolokythia Krokettes (Zucchini Pancakes)

3 cups grated zucchini
1 teaspoon salt
3 eggs
1 cup grated feta cheese
1 1/2 teaspoons minced fresh mint leaves
3 tablespoons flour
Pepper
Butter

Mix zucchini with salt and let stand 1 hour
Squeeze out moisture
Beat eggs
Add zucchini, cheese, mint, flour and pepper to taste
Fry 1 tablespoon at a time in butter over medium heat
Brown on both sides

Makes 18 pancakes or 6 servings
